One of Los Cabos' first organic farms—Chef Enrique Silva's 19th-century hacienda, live from the fields. Los Tamarindos is one of the original farm-to-table destinations in all of Baja California Sur, founded in 2003 by Chef Enrique Silva on a 17-acre 19th-century sugar cane plantation in Ánimas Bajas. Guests can literally see the farm that grew their meal from their table. The menu is driven by what's harvested each day—thyme-roasted quail, lemongrass chicken, pork shank in green mole, chocolate clams, coconut ceviche—all made with handmade tortillas, fresh pasta, and eggs from on-site chickens. Farm tours, hands-on cooking classes, bungalow lodging, and a gift shop with Oaxacan textiles complete the offering. The gravel-road drive is part of the experience.
